RECIPE: Oven-baked Chicken, and Cheese Taquito (rolled-up tortilla)

A taquito or rolled taco is a Mexican food dish that typically consists of a small rolled-up tortilla that contains filling, including beef, cheese, or chicken. The filled tortilla is then flash or deep-fried.

You can lighten them up without losing any flavor by oven baking them instead.

These creamy oven-baked ones are super easy to whip up and are packed with flavor. The husband and the picky 8-yo gave these a thumbs up!

Making these couldn't be easier. You'll need a medium rotisserie chicken to shred for the filling. I pick my chicken clean of the white and dark meat. I believe the mixture adds more flavor (and nutrition).

For the filling, soften a block of cream cheese and mix it with sour cream. (You can use lighter versions of both, but dear friend, avoid fat-free of either.) You'll need your favorite jarred salsa, cumin, chili powder, garlic powder, onion powder, salt, and a combination of shredded cheddar and pepper jack cheese.

Add in the shredded chicken, and you're ready to roll!

I used high fiber tortillas. Use your family's favorite. Fill the tortillas, roll them and place them seam-side down onto a lined baking sheet. Bake them until golden brown and crispy.

Eat them plain or dunk them in salsa or pair them with favorite Mexican toppings.

Ingredients

Rotisserie chicken - shredded

* 8 oz (1 block) cream cheese

* 3 tbsp. Sour cream

* ⅓ c. salsa

* 1 tsp. cumin

* 1 tsp. chili powder

* 1 tsp. garlic powder

* 1 tsp. Onion powder

* ½ tsp. salt

* 1 c. shredded cheddar cheese

* ½ c. shredded pepper jack cheese

* 8-12 6inch tortillas - or get smaller tortillas for a more traditional, tighter rolled, less filled taquito

Line your baking sheet with parchment paper for easier cleaning up. Bake at 425 for 20+ minutes till the tortillas are crispy, and the cheese is melted. Also, don't overfill, so the filling oozes out and makes a mess on your pan. And last, they need to be cooled before eating bc that cheese gets h. o. t.

In case you couldn't tell: I'm not a professional food photographer! And, quite frankly, I'm tired of spending a lot of time fretting over photos and not posting delicious recipes because the pictures don't look magazine-worthy, so these are real-life photos for you.

Consider how precious a soul must be when both God and the devil are after it.

“Consider how precious a soul must be when both God and the devil are after it.” Charles Spurgeon

When it comes to living a healthier life, you might feel you are at war with yourself, about yourself, and you don’t stand a chance. That is because you are fighting the wrong enemy and using the wrong weapon. Satan doesn’t care about the size of your thighs, but he cares because YOU care. Therefore, he will use that insecurity against you to distract you from living God's life for you. You can’t be all in for God’s plan if your eyes stay fixed on a scale or the mirror. In my opinion, one of the devil's most significant achievements is the “wellness industry,” stealing the West’s resources and attention to be in constant search for a worldly standard or health, beauty, and happiness.

Jesus doesn’t care about the size of your thighs. But, He, too, cares because YOU care. Many of us do not take our body image insecurities or struggle with food to God because we have a twisted idea that He’s disappointed we can’t have “discipline” or “self-control” over our temple.

That’s another lie from the enemy.

Have you ever thought that your struggle with food and body is an invitation to drawer nearer to God? To lean into and trust the Holy Spirit promptings around food? Knowing that when significant changes in your daily habits or health occur, there’s only one who can get the glory because you were too weak to achieve it on your own.

What if another diet isn’t the weapon you need but a deeper relationship with Christ?

What if you turned your shame around food and your body size into a reason to worship?

What if today you prayed and asked God to open your eyes to all the ways the enemy keeps you distracted with food or the scale?

What if we could all be as happy as a baby, running wild and free in their skin, as is?
